Cold Cucumber Soup with Irish Sea Moss

Imagine this: you’ve spent the day basking in the sun, maybe you've had a dip in the pool, and now you’re craving something light, refreshing, and nutritious. This soup is the answer! It’s cool, creamy, and bursting with fresh flavors from cucumbers, dill, and basil. The real secret ingredient? BareOrganics Organic Irish Sea Moss Powder. Ingredients:

  • 2 English cucumbers
  • 1 garlic clove, minced
  • 1 ½ cups plain Greek yogurt
  • ¼ cup extra virgin olive oil, plus more for serving
  • ¼ cup loosely packed dill, plus more for garnish
  • 2 tablespoons fresh basil

  • Juice of 1 lemon (about 3 tablespoons)
  • Kosher or fine sea salt, to taste

  • 2 green onions, thinly sliced

Coarsely chop 1 ½ cucumbers. Finely dice the remaining half and set aside for garnish.

Place the cucumbers, garlic, yogurt, ¼ cup olive oil, dill, basil, Irish Sea Moss, and lemon juice in a blender and blend until smooth. Season to taste with salt and pepper. Chill for at least 4 hours.

To serve, garnish with finely diced cucumbers, dill, and green onions.
