Chopped Salad with Spirulina Dressing


For the vegan parmesan:

•   1/4 cup raw cashews

•   1/2 tsp garlic salt

•   1 tbsp nutritional yeast

For the dressing:

•   1/4 cup olive oil

•   Juice from 1/2 lemon

•   1 tsp apple cider vinegar

•   1 tsp spirulina

•   1/4 avocado

For the salad:

~1 cup kale, chopped

~ 1 cup cabbage, chopped

~1/2 cup cucumber, chopped

~1/3 cup green onion, chopped

•   1 tbsp cilantro, cut up


1.         Prepare vegan parmesan by blending together cashews, garlic salt and nutritional yeast.

2.         Prepare dressing by blending together olive oil, lemon, apple cider vinegar, spirulina and avocado.

3.         Chop up veggies for the salad. Toss it all together.

4.         Pour in the vegan parmesan and mix well.

5.         Mix in the dressing and serve. Enjoy as a side dish or as a foundation for protein.
