Pink Pitaya and Coconut Chia Pudding with Coconut Milk Powder

This BRIGHT, BEAUTIFUL, bowl of rainbow yum is a perfect start to a smiley day! A tropical breakfast that will brighten the grumpiest, coldest morny mood!


- 1/2 cup plant based milk
- 1/2 cup water
- 4 tbs chia seeds
- 1/2 cup @bareorganicssuperfoods coconut milk powder
- 1/2 cup pink pitaya fruit, mashed
- 1 tbs date syrup
- 1/2 tsp vanilla


- kiwi
- mango
- coconut


In a bowl combine all ingredients and whisk thoroughly. Let stand for 5 mins and whisk again, breaking up any lumps. 

Refrigerate for an hr or even overnight.
