Gluten-Free Oat & Maca Waffles

Not only are these waffles cozy and delicious, but they’re also made with wholesome ingredients like oat flour and BareOrganics Maca Root Powder, so you get a little boost of nourishment with every bite.

These Gluten-Free Oat & Maca Waffles have quickly become one of our go-to breakfasts, easy, nourishing, and just a little bit special. Using a mini waffle maker makes them even more enjoyable (and honestly, kind of adorable).

Ingredients

  • 1 ½ cups certified gluten-free oat flour
  • 4 tablespoons BareOrganics Maca Root Powder
  • 2 teaspoons baking powder
  • ½ teaspoon kosher or fine sea salt
  • ¾ cup milk of choice (plus more if needed)
  • 5 tablespoons melted coconut oil or unsalted butter
  • 2 large eggs
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract

Directions

  1. Step 1: Mix the Dry Ingredients - In a large bowl, whisk together oat flour, maca powder, baking powder, and salt.
  2. Step 2: Combine the Wet Ingredients - In a separate bowl, whisk milk, melted coconut oil (or butter), eggs, maple syrup, and vanilla.
  3. Step 3: Make the Batter - Add the wet ingredients to the dry ingredients and stir until just combined. It’s okay if the batter is a little lumpy.
  4. Step 4: Let It Rest - Let the batter sit for about 10 minutes, this helps the oat flour hydrate and improves texture.
