Ingredients

Crust
- 5 Cups Keto Cookies or Graham Crackers: Use either keto graham cracker crust, crushed peanut butter cookies or crushed almond butter cookies.
- 1 and 1/4 Cups Unsalted Butter: Make sure to measure in its melted state.
Filling
- 2 Scoops BareOrganics Energy and Stamina Blend Power: Click Here
- 4 Cups Cream cheese: Softened and at room temperature.
- 2 and 1/2 Cups Sour cream: Softened at room temperature.
- 1 and 1/2 Cup Superfine sugar substitute: Caster sugar. Blend allulose until it has a finer texture.
- 6 Large Eggs: Room temperature.
- 2 TBSP Vanilla Extract

Crust
Add your cookies to a food processor (or crush in a ziplock bag) and break them down until a fine consistency remains. Place the crushed cookies into a bowl and mix through the melted butter. Transfer the mixture to a 9-inch spring-form cake pan and refrigerate it.
Filling
Add the cream cheese, sour cream, and sugar substitute into a bowl and hand mixer or high-speed blender and pulse until smooth. Add the eggs and vanilla, and blend once more until combined.
Bake for 50-55 minutes, or until the cheesecake has set in the middle. Let the cheesecake cool completely before refrigerating it for at least four hours to firm up beautifully.
